Carrots were not always orange. Originally carrots were purple or white. It wasn’t until Dutch farmers began cultivating mutated strains of purple carrots that the sweeter tasting orange carrot began to develop as a garden staple. Today there are about 20 different species of carrots so it’s no shocker these veggies take on a variety of colors.
